Diabetic Friendly: Quiche Cups

2 egg whites
1 cup shredded part-skim Swiss cheese
1 cup baby spinach leaves, chopped
1 cup Brookshire’s fat-free milk
1 red bell pepper, chopped
1/2 cup Food Club all purpose flour
1 tsp Food Club baking powder
1/4 tsp Food Club salt
1/2 tsp Food Club ground pepper
Preheat oven to 350°F. Spray a mini-muffin pan with cooking spray or use parchment paper liners. In a large bowl whisk together eggs, egg whites, cheese, spinach and milk. Fold in chopped bell peppers.
In a small bowl combine flour, baking powder, salt and pepper. Slowly add flour mixture to egg mixture; whisk until well combined. Pour egg mixture into mini-muffin pan. Bake 20 to 25 minutes or until set.
