A Springtime ClassicSpringtime salads are a refreshing addition to any meal. Strawberries are one of the most popular springtime fruits available.

 

Put them both together and you have strawberry salad, an amazingly tasty springtime salad that will garner you plenty of compliments every time you serve it.

 

Spinach and Fruit Salad with Strawberry Poppy Seed Dressing

Serves 4

 

Prep time: 10 minutes

Low Sodium!

 

Ingredients:
4 cups spinach leaves
2 cups sliced strawberries, divided
1 cup halved red grapes
1/4 cup pecan pieces
1 Tbs sugar
1 Tbs raspberry or red wine vinegar
1/3 cup fat-free lemon yogurt
3/4 tsp poppy seeds

 

Directions:

Arrange the spinach on a serving platter. Place 1-1/2 cups strawberries and grapes on the spinach. Top with pecan pieces.

In a blender, combine 1/2 cup strawberries, sugar, vinegar, yogurt and poppy seeds. Blend until smooth. Pour dressing over the salad.
