Alternative Breading
Instead of using bread crumbs for breaded meat and vegetables, try crushed cereal. Pick a high fiber cereal, like Fiber One or bran cereals, to boost the nutrition of your meal.
Try to find a cereal that has at least 3 grams of fiber. Place the cereal in the food processor and process until cereal turns into crumbs.
If you don’t have a food processor just place cereal in a zip top bag and crush (this is a good job for your kids).
Add some seasonings to your cereal crumbs and maybe a little shredded cheese. Dip your vegetable or meat into eggs or buttermilk and coat with crumbs.
Bake your meat or vegetables like normal.
