Black Beans
When looking at black beans, you may think that is a lot of carbohydrates but look further. Black beans are a good source of fiber and also full of protein. One cup of cooked black beans has 15 grams of fiber and 15 grams of protein. Black beans are nice to add to salsa, tacos, or a Mexican pizza.
Black Bean Salsa
Serves: 12
Prep time: 7 minutes
Ingredietns:
1 (16 oz) can black beans, drained
1/4 cup cilantro, chopped
1/2 cup onion, chopped
1 tomato, chopped
1 bell pepper, chopped
1 Tbs lime juice
1/2 Tbs cumin
Directions:
In a medium bowl, combine beans, vegetables, and lime juice. Sprinkle on cumin. Refrigerate for an hour.
