Broiling TipsBroiling is a fast method of searing meats or browning the tops of casseroles and desserts. It uses high heat to create a crisp outer layer while keeping the inside moist. Broiling is similar to grilling, except the heat source comes from above the food instead of below.

            • Use a broiler pan so meats don't sit in their juices. The raised rack allows the fat to drip away.
            • Spray the pan and rack with cooking spray to keep foods from sticking.

             

  • Always preheat both the broiler and the pan for 5 minutes before cooking. If they're hot, the foods will cook more uniformly.
  • Rotate the pan or turn thicker cuts of meat halfway through for even cooking.
  • Keep a close watch. Because of the high temperature, foods can burn quickly.
