Can You Bake a Cherry Pie?February 18th is President's Day and this presents a great opportunity to discuss the meaning of this holiday and create some goodies that reflect its importance. President's Day honors all the presidents who have served our country, but we always seem to emphasize George Washington and Abraham Lincoln the most.

 

George Washington's story is all about honesty and being brave enough to tell the truth. When he was young, as the legend goes, he chopped down his father's cherry tree, but didn't hesitate to admit what he did.

 

With cherries in mind, here's a delicious and easy way to make a cherry pie. There's no baking involved, and it's ready in 10 minutes, so it's perfect for younger cooks. As an adult, you can open the can of cherry pie filling in advance to minimize exposure to sharp edges.

 

George Washington Mini Cherry Pies

Prep time: 10 minutes

Serves 8

 

Ingredients:

8 mini-size graham cracker pie crusts (available in the baking aisle)

1 (19-oz) can reduced-calorie cherry pie filling

1 (8-oz) tub nonfat whipped topping, thawed, or 1 can spray whipped cream

 

Directions:

Place each mini pie crust on a tray or baking sheet. Spoon cherry pie filling into each pie crust and top with a dollop or a spritz of whipped topping. Chill until serving time.
