Cheesy Lasagna

Pasta comes in many shapes and sizes; you can get them long and skinny or short and fat. As a diabetic, pasta that is made from whole grain flour, which produces whole wheat pasta, is the most ideal pasta for you. According to the American Diabetes Association, a serving size of pasta is 1/3 cup of cooked pasta.

 

Cheesy Lasagna

 

Serves:4

 

Prep time: 20 minutes         Cook time: 20 minutes

 

Ingredients:

1 (8 oz) pkg lasagna noodles

2 cups 2% mozzarella cheese

1 cup parmesan cheese

2 cups fat-free cottage cheese

1 egg

1 tsp oregano

1 tsp basil

2 garlic cloves, minced

1 can spaghetti sauce

 

Directions:

Preheat oven to 350°F. Boil and drain pasta. In a medium bowl, combine cheeses, egg, and seasoning. In a baking dish, add a layer of noodles followed by a layer of cheese. Repeat until no more noodles. Top with remaining cheese and spaghetti sauce.

 

Bake for 30 minutes or until the cheese is bubbly.
