Chicken-Surprise Quesadillas
2 cups cooked and shredded chicken meat
(such as from a rotisserie chicken)
4 cups baby spinach (about 3 oz)
1 cup grated Monterrey Jack Cheese
4 flour tortillas
1 avocado, diced
1/2 cup salsa
1/4 cup sour cream
Directions:
Heat a grill or griddle. In a large bowl, combine the chicken, spinach and cheese. Dividing evenly, place the mixture on one half of each tortilla. Fold the other half over to cover.
Cook on medium heat until the cheese melts and the tortilla is crips, about 3 minutes per side. Serve with avocado, salsa and sour cream
