Chicken-fried steak is a southern favorite. No, make that a nation-wide favorite!

 

Everyone loves the crispy, savory tastes that combine for this dish.

 

There's one big problem with most recipes for chicken-fried steak, however. Because the steaks are deep fried, they are not very figure-friendly. A typical serving can contain more than 1000 calories and 55 grams of fat!

Lower Fat Chicken Fried Steak

 

Ingredients:

4 (about 4 oz each) beef cutlets

1/2 cup fat-free buttermilk

1 cup flour

1/2 tsp salt

1 tsp pepper or steak seasoning

2 Tbs vegetable oil

2 cups fat-free milk

 

Directions:

Dip steaks into buttermilk to coat all sides. Combine the flour, salt and pepper. Measure 1 tablespoon for the gravy and set aside. Dip buttermilk-coated steaks into flour mixture so that flour sticks to all surfaces. Set aside on wax paper for 20 minutes.

 

Heat a nonstick skillet over medium heat with 1 Tbs oil, (add remaining 1 Tbs oil if needed). Cook steaks on each side in hot oil until golden (5 to 6 minutes). Turn carefully so that coating does not stick to pan.

 

Remove from pan and keep warm. Combine milk and reserved tablespoon of flour in a jar with tight-fitting lid. Shake well. Stirring constantly, add milk mixture to skillet. Be sure to scrape up any pieces of crust stuck to bottom. When all the milk is stirred in, raise heat and bring mixture to a boil. Lower heat and simmer until gravy thickens (about 3 to 5 minutes). Continue stirring and adjust seasoning to taste with salt and pepper. Serve gravy over steaks.

 

Serve with mashed potatoes, steamed broccoli and carrots, plus brownies for dessert!
