1. Mess. Dipping the cutlets into milk and then flour makes for very messy fingers. If you're not the rubber-glove-wearing type of person, consider using ONE hand for dipping.

 

Hold the beef cutlet in your right (or dominant) hand and dip into the milk. Do not place your other hand in there! Then—still using your right hand—remove the cutlet and dip into the flour. Since you still have one clean hand, you'll be able to answer the phone or turn on the water faucet without making a big mess.

 

2. Fat content. Chicken fried steak is not a dieter's friend. Make the numbers improve by using only a tablespoon or two of oil in the skillet used to cook the meat. Since most recipes ask for deep frying, this is a huge fat savings! And when it's time to make the gravy, use low-fat or fat-free milk.

 

With these two tips, you can save over 20 grams of fat and 400 calories!
