Chicken and Rice

 

Serves: 4

Prep time: 10 minutes   Cook time:  20 minutes

 

Ingredients:

1 cup long grain rice or brown rice

1 pound chicken breast, cooked, sliced

1 Tbs olive oil

1 bell pepper, chopped

1/4 cup green onions, chopped

1/4 cup parsley, chopped

 

Directions:

Cook rice as package directions. Sauté bell pepper, green onions, and parsley until vegetables are tender. Combine rice, cooked chicken, and sauté vegetables. Mix well.
