Chili Enchiladas
Chili Enchiladas

Cook Time: 20 minutes
Ingredients:
1 lb ground turkey
1 Tbs cumin
1/2 cup Food Club fat-free sour cream
1 bell pepper, chopped
1 tsp onion flakes
1/4 cup cilantro
2 cup 2% cheddar cheese, shredded
1 1/2 cups Food Club black beans, cooked
10 corn tortilla
1 can (15 oz) Food Club Chili
salt and pepper, to taste
Directions:
Pre-heat oven to 350°. In a skillet, combine ground turkey, cumin, salt and pepper; cook turkey until browned. In a medium bowl, combine browned turkey, sour cream, bell pepper, onion flakes, cilantro, and 1 cup cheddar cheese. Cook black beans according to package and add into turkey mixture. Place turkey mixture into each tortilla and place in a baking dish. Pour chili over tortillas and sprinkle on remaining cheese. Bake in the oven for 20 minutes or until cheese is bubbly.
