Chuck Roast: A Budget's Best FriendThe weather's getting cooler, and that means the crock pot will be coming out. Inside, you'll find all those fabulous cold-weather foods, like pot roast.  If you've priced pot roasts, though, they can be expensive! How awful to spend that much money and then ruin a big piece of meat, just because you didn't know the best way to cook it!

 

Here's a great way to stretch your budget without sacrificing any flavor: get a chuck roast.The fancier—and more expensive—cuts of meat, such as sirloin, can get quite tough when they're cooked for long stretches. But chuck roast (sometimes called an arm roast) actually improves the longer it's heated.

 

Chuck steak isn't too tender. It's full of gristle. But cooking breaks down the connective tissues in these cuts and that makes the meat so tender it shreds with a fork.

 

Easy Slow Cooker Beef Pot Roast

Serves 8

 

Ingredients:

2 1/2 to 4 lb chuck roast

1 (15-oz) can stewed tomatoes (cut up, if whole)

1 1/2  Tbs beef bouillon granules

 

Directions:

Combine all ingredients in the slow cooker. Cover and cook on low for 9 to 11 hours. Add salt and pepper to taste. Potatoes and carrots complement this dish well.
