Colorful Corn
What a fancy way to fix veggies!

Cooking a Thanksgiving turkey is a big job! Most of the other foods are much easier—and faster to fix. You and your child might enjoy fixing this colorful corn side dish.
This colorful medley of red and green sweet peppers and creamed corn, with a crunchy contrast of seasoned croutons, makes a delightful side dish and the perfect partner for poultry. If your child is quite young or inexperienced in the kitchen, you can help by cutting the peppers in advance and using a can opener on the corn. You could also pre-measure the other ingredients to help prep time go a bit faster.
This recipe can be cooked in the microwave instead of the standard oven, but the croutons won't be quite as crunchy.
Colorful Corn
A Brookshire's Best Recipe
Ingredients:
2 Tbs. butter
2 Tbs. minced green bell pepper
2 Tbs. minced red bell pepper
1 (14.75 oz) can creamed corn
2/3 cup seasoned croutons
1/2 cup milk
1/4 tsp ground black pepper
Directions:
Preheat oven to 350 ° F. Spray an 8x8 inch baking dish with nonstick spray.
In a medium saucepan over medium heat, melt the butter. Slowly cook and stir the green bell pepper and red bell pepper until soft.
Mix the green bell pepper, red bell pepper, creamed corn, seasoned croutons, milk and ground black pepper in the baking dish.
Bake uncovered for 40 minutes, until bubbly and lightly browned.
Note: to save time, use frozen mixed, diced bell peppers instead of the minced red and green peppers.
