Cooking Without Alcohol

If you’re considering a recipe that calls for alcohol, there is often another ingredient you can use instead. The following alternatives will help you enjoy even more foods.
| 1/4 cup white wine | = |
2 tablespoons each white grape juice and chicken broth |
| 1/4 cup red wine | = |
2 tablespoons each red grape juice and beef broth |
| 1/4 cup bourbon | = |
1/4 cup apple juice plus 1 teaspoon vanilla extract |
| 1/4 cup rum or brandy | = |
2 tablespoons water plus 2 tablespoons apple juice |
| 1/4 cup port or sherry | = |
2 tablespoons each apple juice and red grape juice |
| 2 tablespoons amaretto | = |
1/2 teaspoon almond extract plus 3 teaspoons water |
And as general guides:
| Champagne | try ginger ale |
| Cointreau | substitute orange juice or frozen orange juice concentrate |
| Cognac | use juice from peaches, apricots, or pears |
Creme de menthe |
spearmint extract or oil of spearmint diluted with a little water or grapefruit juice |
Grand Marnier or Orange-Flavored Liqueur
