Summertime…and the living is easy. It may be easy, but we still need to eat. Even when it's hot, supper has to get fixed, but it doesn't have to be cooked. Your kids will enjoy helping with these creative, healthy and fun sandwiches. Use cookie cutters to make simple sandwiches suddenly seem extra-special! And if you do a good job with marketing your new product, the kids will also want to gobble up the scraps! Just tell them that eating scraps is a cooks-only treat.
Cut Out Sandwiches
A Brookshire's Best Recipe
Serves 4
Ingredients:
3 tsp reduced-fat sour cream
3 Tbs reduced-fat ranch dressing
8 slices whole-wheat bread
4 slices reduced-fat cheese
8 slices shaved deli meat (turkey, ham, roast beef)
Favorite sandwich toppings (lettuce, tomato, bell pepper, shredded carrot)
Directions:
In a small bowl, combine the sour cream and ranch dressing. Spread onto the 8
slices of bread.
Place 2 slices of meat and 1 slice of cheese on 4 of the slices.
Top with cheese and sandwich toppings.
Top with the remaining 4 slices of bread.
Press a cookie cutter through each sandwich before serving. Use as large a cookie cutter as you can, so that you get a big sandwich!
