Diabetic Salad

Blueberry Spinach Salad

Serves: 4

Prep Time: 15 minutes

 

Ingredients:

1 (6 oz) bag baby spinach

1 cup blueberries

1/4 cup chopped pecans

1/4 cup Food Club Extra Virgin Olive Oil

1/4 cup Food Club Cider Vinegar

1/2 tsp Food Club Salt

1 tsp poppy seeds

 

Directions:

In a large bowl combine spinach, 1/2 cup blueberries and pecans; toss. In a food processor add remaining 1/2 cup blueberries; process until liquid. Pour blueberry juice into a small bowl or jar. Add oil, vinegar, salt and poppy seeds to bowl; mix well. Pour blueberry dressing over salad.
