Enjoy Family Dinner Night With Catfish Nuggets!
Monday, September 22nd is Family Dinner Night. It's a great opportunity to take time to eat dinner together, and remember how important quality family time is.
Any food will work—what matters is spending time together in a happy atmosphere. If you're looking for a kid-pleasing, healthy-but-yummy seafood choice, here's a great one: catfish nuggets. They're on the same order as chicken nuggets, but (obviously) are made with catfish.
Many times you'll find uncooked catfish nuggets at the Super 1 Foods seafood counter. If not, though, it's simple enough to take several catfish fillets and cut them into nugget-sized portions.
Deep-fried nuggets are mighty tasty, but when you're trying to fix foods that promote health, there are better options. Try this recipe for catfish nuggets—using a nonstick skillet, you can use just a touch of olive oil and serve up fish nuggets that are crispy, tasty and much-lower in fat!
Cornmeal-Crusted Catfish Nuggets
Serves 4
Prep time: 10 minutes; Cook time: 10 minutes
Ingredients:

3/4 cup cornmeal
2 Tbs paprika
1 tsp seasoned salt
1 tsp pepper
2 lbs catfish nuggets, or catfish fillets cut into small pieces
2 Tbs olive oil
Directions:
Stir together cornmeal, paprika, seasoned salt and pepper in a large shallow dish. Dredge the catfish nuggets in cornmeal mixture; coat lightly with vegetable cooking spray.Heat a nonstick skillet to medium high. Add olive oil and cook catfish nuggets, in batches 2 to 3 minutes or until golden, gently turning to brown each side.
Serve with plenty of ketchup and tartar sauce!
