Entertaining is a general term. It's up to you to define it: will the gathering be small or large? Will it be a casual get-together or a formal dinner? Once you decide the format, the size of the group and theme, the details will fall into place.
If you're planning a buffet-style meal where guests serve themselves, think about the table arrangement. It's easy enough to set platters and bowls in a line, but it's more appetizing to use creative placement. Consider putting a serving tray on top of an inverted bowl or block of wood to add varying height; serve dips in bowls made from hollowed-out vegetables; make a simple centerpiece of lemons and limes in a clear vase. It's just as important to please the eye, as it is to tickle the taste buds!
Fruits, desserts and relishes can be served on chilled trays or with frozen centerpieces. Hot foods can be presented in chafing dishes, in insulated containers, or on an electric hot warming tray.
