Focaccia SandwichWhen you're browsing in the bakery area of Super 1 Foods, take a look at some of the more unusual types of bread. Have you ever tried focaccia (pronounced foe-KAH-sha)? There's nothing scary about it. It's bread—a bit dense and heavy, but regular old bread.

 

It often has a combination of grains, so it has a hearty flavor. Focaccia makes great sandwiches, because it doesn't fall apart easily, in spite of the fillings you load between slices. Focaccia is often featured as a round loaf, and making sandwiches often involves slicing the bread into two rounds, filling meats and cheeses between the top and bottom, and then cutting the whole round loaf into wedges.

 

Here's a recipe for a layered Italian-style focaccia sandwich. You can substitute with whatever meat and cheeses you have at home, but this is a good guide to get you started.

 

Layered Italian Focaccia

Serves 6

Prep time: 5 minutes, plus chilling time

 

Ingredients:

1 (8-inch) round focaccia bread or 6 individual focaccias

1 (7 oz) container refrigerated basil pesto

4 oz sliced hard salami

6  lettuce leaves

4  small tomatoes, sliced

6 oz thinly sliced smoked turkey

4 oz sliced provolone cheese

 

Directions:

Cut focaccia horizontally in half.

Spread pesto on both cut sides of focaccia.

Layer salami, lettuce, tomatoes, turkey and cheese on bottom of focaccia; add top of focaccia. Wrap in plastic wrap and refrigerate at least 1 hour to blend flavors.

 

Cut into 6 wedges.
