15-Minute Black Bean Salad
Ingredients:
1 (15 oz) can black beans, drained and rinsed
1 cup frozen corn, thawed
8 grape tomatoes, halved
1/4 cup chopped fresh cilantro
2 Tbs olive oil
3 Tbs lemon juice
salt and pepper to taste
Directions:
Mix all ingredients together and serve.
Serves 4
Note for parents: for younger children, you may want to open and drain the beans, and chop the tomatoes and cilantro in advance.
