Halloween wouldn't be Halloween without lots of yummy treats. But when you're diabetic, or watching your weight, or just trying to be healthy, you need to avoid too many treats. This recipe is for a sweet treat that is fat free, low in calories and ideal for folks who want to eat carefully.
They're made of meringue—beaten egg whites—so they're light, puffy little bundles of air.
Help your child fix these fun treats to share with family and friends. You'll also be helping your child learn some of the fascinating science that takes place in the kitchen. When a small bowl of egg whites is placed in the mixer, it transforms into a mountain of thick fluff, all because it's mixed with air. Now that's a fascinating idea for anyone to think about!
Meringue Ghost Puffs

Ingredients:
4 large egg whites
1/4 tsp cream of tartar
1 cup sugar
mini chocolate chips, for decoration
Directions:
Preheat the oven to 200° F. Line a baking sheet with foil.
Using an electric mixer, whip the egg whites with the cream of tartar at high speed until frothy. Gradually add the sugar while continuing to whip at high speed until the mixture holds very stiff, glossy peaks.
Use two spoons to drop the meringue in irregular, spiky mounds on the prepared baking sheet. (Alternatively, use a large plastic bag, with a tiny corner cut off to pipe the meringue into plump cones.)
Bake in the pre-heated oven for three hours, until dry. (If you live in a humid area, the meringue may take longer to dry completely. Turn the oven off after three hours' baking time, but allow the meringues to remain in the oven with the door closed until cool.)
Use a toothpick to poke small holes in the meringues, then insert mini chocolate chips to form the ghosts' eyes.
Store the ghosts in an airtight container at room temperature for up to two weeks. In a humid environment, the ghosts will become sticky during storage and should be prepared within a day of being served.
