Ham 101
The basics you need to know for a holiday dinner.

Ham is one of the leanest cuts of pork. According to the U.S. Department of Agriculture,
a 3.4 ounce (100 grams) serving of roasted extra-lean ham has about 145 calories,
5.5 grams of fat, 21 grams of protein and 53 milligrams of cholesterol.
Ham contains a significant amount of vitamins B-1 and B-12.
What type of ham are you looking for?
Here is a glossary of the key terms when it comes to ham:
- Fully Cooked Ham: ready to eat without further cooking. It has previously been cooked to an internal temperature of 147° F.
- Partially Cooked Ham: heated to 137° F, this ham will still require additional cooking.
- Boiled Ham: boned, cured and cooked with no further cooking required.
- Uncooked Ham: requires full cooking.
- Sliced Spiral Ham: a pre-cooked ham with a continuous cut around the meat, it has evenly thick slices and is very convenient.
- Bone-In Ham: Allow 2 to 3 servings per pound.
- Boneless Ham: Serves 4 to 5 per pound.
- Semi-Boneless Ham: Provides 3 to 4 servings per pound.
If you purchase a ham that has not been pre-glazed, jazz it up!
Create an easy and tasty ham glaze to enhance the flavor.
Mix equal amounts (approx. 1/4 cup, depending on size of ham)
of prepared mustard and brown sugar.
Spread mixture over ham surface for the final 30 minutes of cooking
Mix 1 cup of raspberry preserve (or cherry, apricot, etc)
with 1/2 cup of honey. Mix until well blended
and brush on ham during the last 15 to 30 minutes of baking.
