Nothing beats a hearty breakfast of ham, eggs and potatoes, but when you're still rubbing the sleep sand out of your eyes, cooking isn't too appealing.
Wouldn't it be amazing if that big breakfast of ham, potatoes and eggs could be ready before your coffee's done brewing? The secret to speedy breakfast success is simple: use a slow cooker!
With just a bit of prep work the evening before, you too, can have a tasty and substantial breakfast waiting for you in the morning.
Ham and Potato Breakfast in a Flash
A Brookshire's Best Recipe
Ingredients:
1 lb frozen potato puffs (example: tater tots)
1/2 lb diced ham
1 cup reduced-fat shredded cheddar cheese
6 eggs
1/2 cup fat-free milk
salt and pepper to taste
Directions:
In a large slow cooker, layer 1/3 of the potatoes, 1/3 of the ham, and 1/3 of the cheese. Repeat layers two more times, ending with cheese.
In a medium mixing bowl, combine eggs and milk and beat with whisk or fork until combined. Season with salt and pepper to taste. Pour the egg mixture over the layers in slow cooker. Cook on low for 8-10 hours.
Options: add chopped onion and bell pepper along with the ham.
