It's hard when cultures clash. The southern fried chicken of years gone by is what we all remember. Unfortunately, most of us also remember that deep-fried foods aren't at the top of the healthy-foods list of 2008.
That's where compromise comes in. You can still enjoy crispy chicken, but if you use a little ingenuity, you can save fat and calories. Try this oven-fried chicken recipe. Sure, you'll be able to tell the difference, but your cardiologist will thank you!
OVEN FRIED CHICKEN
Serves 6
Ingredients:
6 boneless skinless chicken breast halves (2 pounds)
2/3 cup buttermilk baking mix
1 1/2 tsp paprika
1 1/4 tsp salt
1/4 tsp pepper
Directions:
Preheat oven to 425°F.
Stir together baking mix, paprika, salt and pepper; coat chicken. Place chicken in pan. Bake uncovered 20 minutes. Turn; bake about 20 minuets longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.
