Loaded Potato
These aren't just for toddlers. Fix a batch of them and let the whole family enjoy a tasty, healthy side dish.
Ingredients:
1 medium to large potato
1 cup cauliflower or broccoli pieces
2 tomatoes, peeled and chopped
2 Tbs grated cheddar cheese
1 tsp butter
3 or 4 Tbs milk
Directions:
Prick the potato and microwave it in the oven until soft, about 5 to 7 minutes, depending on the size of the potato. Steam the cauliflower or broccoli until tender.
Peel and chop the cooked potato and mix all remaining ingredients together. Process in a blender or mash with a fork. Serves about 3 toddler-sized servings.
