Make Dinner Special: Go Nuts!
Chicken breasts again? The same old dinner can get boring. If you’ve got chicken on the menu tonight, here’s a simple way to liven things up.
Make pecan-crusted chicken breasts! You can also adapt it to be walnut-crusted, almond-crusted and even peanut-crusted—the choice is yours!
Simply coat thin cutlets of meat (1/2-inch thick or less) in cooking spray, and then dredge in a mixture of breadcrumbs (try crispy Panko crumbs sometime!) and finely chopped nuts of any type. For six servings, use a half cup of crumbs and a quarter cup of nuts. The nuts add extra crunch, flavor and heart-healthy monosaturated fats (plus only 32 extra calories). And since cutlets cook quickly, the nuts won’t burn.
