Make Mine Red, White and Blueberry!
I bet you've seen those sheet cakes that are decorated like flags for July 4th. They're so pretty—but so much work!
After going to all that trouble, you're afraid to cut it and serve it! Here's a frozen pie that is much easier, but every bit as red-white-and-blue special!
And the best part is you can make it several days in advance and store it in the freezer. That makes one less thing to focus on at mealtime!
Red, White and Blueberry Frozen Yogurt Pie
Serves 8
Prep time: 10 minutes, plus freezing time
Ingredients:
2 containers (6 oz each) low-fat vanilla yogurt
1 (8 oz) tub non-dairy whipped topping, thawed
1 graham cracker pie crust
2 cups red berries (sliced strawberries or whole red raspberries)
1 cup blueberries
Directions:
Mix the yogurt and whipped topping and spoon into the pie crust.
Freeze until firm, about 4 hours.
At serving time, use red and blue berries to make a patriotic pattern. Consider red flag stripes, blue star background, or any other type of design.
