Mardi Gras RecipesCreole Dirty Rice and Shrimp

Ingredients:

1 cup water

1 Tbs butter

1 (15 oz) can diced tomatoes, undrained

1 pkg Zataran's Dirty Rice Mix

1 lb pre-cooked shrimp, thawed

 

Directions:

Mix the water, butter, tomatoes and rice in a 1-quart saucepan. Bring to a boil, reduce heat, and simmer for 20 minutes.

 

Add the shrimp to the rice mixture and simmer 5 more minutes.

Turn off heat and let stand for 5 minutes before serving.

 

Serves 6.

Creamy Crawfish Cups

A Brookshire's Best Recipe

 

Ingredients:

2 pkgs Athena Phyllo Mini-Cups (15-count each)

Tony Chechere's Gravy Mix (or a white gravy mix)

1 Tsp Tony Chechere's Seasoning

1 (1 lb) pkg crawfish pieces, thawed

1/2 cup shredded reduced-fat Pepper-Jack Cheese

 

Directions:

Preheat oven to 350 degrees. Place phyllo mini-cups on a baking sheet.

 

In a saucepan, prepare the Cajun gravy according to package directions. Stir in the Chachere Seasoning, crawfish pieces and shredded cheese. 

 

Spoon the crawfish sauce into the mini cups. Top with a sprinkle of Pepper-Jack cheese.

 

Bake 15 minutes. Serve warm or at room temperature

Makes 30

 

Note: Phyllo mini cups are found in the frozen food aisle. They come in a small box, near the puff pastry. They're pre-baked and just need to be reheated.
