Mini Springtime Popcorn Cakes

We know. You really do try to fix healthy foods for your children, and you want them to develop an interest in healthy eating habits. Once in a while, though, you need a sweet treat. In fact, dieticians recommend against a too-harsh approach of forbidding junk food—it creates a 'forbidden fruit' attitude and makes many children want to rebel!
So when you need a sweet treat, your child can have fun helping make these popcorn cakes—and if you'd rather have one large cake instead of several small ones, it's easy to customize this recipe.
This recipe will remind you of Rice Krispie Treats. It's quite similar, just substituting whole-grain popcorn for the cereal!
Ingredients:
2 full-sized bags light microwave popcorn, popped, unpopped kernels removed
2 cups gum drops, jelly beans or pastel-colored chocolate candies
1/4 cup vegetable oil
1 large bag marshmallows
4 drops springtime-color food coloring (optional)
Directions:
Spray muffin cups with nonstick vegetable spray. Set aside.
In a large bowl, mix the popped corn with the candy pieces.
In a saucepan or microwave, melt the oil, marshmallows and optional food coloring, stirring occasionally. When fully melted, pour over the popcorn and candy mixture, stirring to combine.
Spread into the muffin tins, pressing down to fit. Cover the pan with foil to keep the cakes moist and let rest until firm, about an hour.
Invert mini-cakes onto a cake platter or individual plates, Garnish with additional bits of candy. Serve at room temperature.
