Want a super-easy recipe for grilled chicken?
Take bone-in, skin-on chicken pieces. Place the chicken, skin-side up, over indirect heat (that's important), close the lid and don't touch it for about 45 minutes. It's that simple!
The closed lid creates an oven-like atmosphere that yields a crisp, golden skin. If you prefer grill marks, turn the chicken during the final 8 minutes or so.
What's indirect heat? It's where the heat source is NOT directly below the meat. With a gas grill, you can use the back (rotisserie) burner or a burner not covered with meat.
For charcoal grills, put the coals on the left side, and grill the meat on the right side of the grate.
Now how easy is that?! If you'd like to sauce up your chicken just a bit, brush some of your favorite barbecue sauce on the chicken pieces for the last 5 minutes of cooking time.
