Lower cholesterol and lower fat, yet richer flavor.

 

 

 

 

 

 

 

 

Ingredients:

12 large free-range eggs

3/4 cup organic sour cream

2 green onions, finely chopped

1/3 cup organic green bell pepper, finely chopped

1/3 cup organic red bell pepper, finely chopped

2 tsp organic Dijon mustard

1/2 tsp sea salt

3 Tbs finely chopped parsley

paprika for dusting

Directions:

Put eggs in saucepan and add enough cold water to cover the eggs completely. Bring to a boil and immediately remove from heat, cover and let stand 15 minutes.

 

Drain eggs, rinse under cold water to cool, and peel eggs.Cut lengthwise in half and remove yolks. Discard 8 of the yolks.

 

Arrange 20 cooked egg white halves on a platter. Chop remaining 4 egg white halves very finely. Mash 4 yolks with a fork, Transfer the whites and yolks to a medium bowl. Stir in sour cream, green onions, green and red peppers, mustard and salt.

 

Pipe or spoon egg mixture into egg white halves. Sprinkle with parsley and dust with paprika.
