Organic Pumpkin Pudding
This is the time of year to serve all those special seasonal favorites—but with a healthy twist! If you don't cook up your own pumpkin and season it with cinnamon, nutmeg and ginger, you can buy canned pumpkin pie filling—it's already spiced and ready to use!
This would be a perfect Thanksgiving dessert—light and fluffy, to complement the hearty dinner just completed.
Organic Pumpkin Pudding
Prep time: 10 minutes
Ingreadients:
1 cup organic canned pumpkin pie filling
1 cup organic plain nonfat yogurt
1 cup organic vanilla yogurt
1/4 cup whipped cream or whipped topping
4 organic ginger snap cookies, crumbled
Directions:
Mix pumpkin pie filling with plain yogurt. In 4 clear glasses, layer pumpkin mixture, vanilla yogurt, 1 Tbs cookie crumbles and one more layer of pumpkin mixture. Top with 1 Tbs of whipped cream and sprinkle with cookie crumbles.
