Organic Roasted Squash Recipe

It's that time of the year! The winter squashes are in the market and they'll all work beautifully in this sweet and savory dish.

 

Roasted Winter Squash

Serves 4

Prep time: 5 minutes; Cook time: 45 minutes

 

Ingredients:

1 (2 lb) butternut squash

1 tsp cinnamon

1/4 cup orange juice

1/4 cup maple syrup

 

Directions:

Preheat oven to 400 °F. With a strong knife, cut the top off the squash, near the stem, and cut the squash into half lengthwise. Scoop out seeds and membranes. Halve again, making 4 wedges.

 

Place the wedges cut side up in a large baking pan. Sprinkle cinnamon on top. Combine orange juice and maple syrup and drizzle over squash. Cover pan with foil and roast 45 minutes. Spoon syrup over the wedges before serving.
