Pizza Soup

Here’s a new twist on pizza that kids love!

 

 

Pizza SoupSome foods are slam-dunk winners for kids, and pizza is one of them. Kids learn about spicy flavors in a fun way, and it can even help them learn to like vegetables—such as mushrooms, onions, olives and peppers! Take advantage of your child’s love of pizza and use it as a tool to teach the fun of cooking. This soup recipe is fun and easy, and it is a way to have all the yummy goodness of pizza in a presentation that is just a bit novel and exciting!

 

This recipe is easy to customize, too. If your kids hate onions, just leave them out! The soup will still taste fine. Instead of pepperoni, you can add cooked ground beef or diced ham (though we haven’t tried Hawaiian Pizza soup yet, so we’re not so sure about adding pineapple chunks. If you try it, let us know how it turns out!).

 

Using a crock pot makes the recipe super-easy and adds to the safety factor for young children, because they don’t have to work around a hot stove. If they prefer faster results, cooking the soup on the stove is the way to go. As a parent, it’s your job to determine which method is the best to try with your children.

Pizza Soup

A Brookshire's Best Recipe

(Skill level: easy, with an adult’s help. Requires use of stove or crock pot, a knife, and perhaps a can opener.)

 

1 bell pepper, diced

1 red onion, diced

1/2 cup sliced turkey pepperoni

2 cans diced tomatoes with roasted garlic (undrained)

1/2 cup tomato sauce

1 1/2 cups sliced mushrooms (canned or fresh)

1 cup water

2 cups fat-free beef broth

1 Tbs dried Italian seasoning

1/2 cup shredded reduced-fat mozzarella cheese

 

Place all ingredients except mozzarella cheese in a large slow cooker or in a large soup kettle. Adapt to reflect your child’s preferences, leaving out ingredients they don’t care for, or adding ones they enjoy on pizza.

 

For slow cooker, cook on low 6 to 8 hours.

 

For soup kettle, bring to a boil and simmer 20 minutes.

 

When vegetables are tender, ladle into soup bowls and sprinkle with cheese. For children, remember to use a pot holder when handling hot pans!
