Pork For Good Luck
Start the New Year off right!

|
Good luck foods for New Year's—what comes to mind? Southerners often think of black-eyed peas, collard greens and hoppin' john. But if you surveyed more folks—the entire country or even the whole world—the biggest New Year's good luck food is pork. Germans like sour kraut and pork, or kielbasa sausage and greens. Us southerners like ham hocks in that pot of black-eyed peas. Others fix a big ham, or start breakfast with sausage and bacon. Pigs symbolize prosperity, so that's where the pork element comes in. So celebrate a prosperous 2008 with a pork-centered dinner.
Blackeyed Peas and Ham Hocks
Ingredients:
1 lb dried blackeyed peas
2 ham hocks or a ham bone with ham left on it
Pepper to taste
2 onions, sliced
hot sauce to taste
Directions:
Place the ham bones or hocks in a slow cooker, add the peas after they have been rinsed (but not soaked), and cover with water completely. Cook all day on low, or 4 or 5 hours on high. Slow cookers vary, so keep checking. You may need to add more water. Stir several times while checking. Season with pepper if you wish. Serve with slices of onion and hot sauce, and maybe some corn bread.
