Quick Fixes
Some weeks it’s hard to find time to slow down in the evening, much less cook dinner. Quick meals are great for busy families and preparing ahead of time is the key.
Make a bag of frozen chicken breasts or thighs your new meal-saver! One bag costs less than $10 and can be an addition to many meals throughout the week.
On Sunday night, put the frozen chicken in a 9x13 baking dish and season however you like. Cover the dish with foil and bake for 50 minutes at 350 degrees. When they’re done, let the chicken cool and then place in zipper-top bags in the refrigerator.
Throughout the week use the pre-cooked chicken for lunch or dinner. It’s great on a salad, chopped in pasta, or shredded in a casserole. You can also leave it whole and eat it on a bun.
Spend 5 minutes putting this together on Sunday night and save yourself a lot of meal prep time during the week.
