Quick and Healthy Lunches
Did you resolve to feed your family better this year? Lunchtimes can be particularly difficult, because they often end up being leftovers and sandwiches. Need some ideas? Here are a few:
1.A little bowl of pizza or spaghetti sauce. That's the dip, and serve it with string cheese, bread slices or even raw veggies. Kids love to dip!
2. Salami, fresh bread, carrots and leftover dinner noodles with olive oil and grated cheese. You got it! Make leftovers into a salad. Just about anything works.
3. PB&J, but make it a great one. Get awesome bread and some fresh fruit spread to go with nut butter….maybe almond butter, even.
4. An English muffin topped with tomato sauce, cheese, veggies or deli meat. Top with the other half of the English muffin and enjoy! No need to bake.
5. Rice and beans, with salsa or guacamole. Again, kids don't mind cold lunches. In fact, they actually like them—remember cold pizza?
