We know, we know. You'd like to fix something nice and festive for your July Fourth picnic, but between the grilling, the potato salad, the tablecloths and getting the kids ready, you just don't have the time for anything complicated.
Well….tah dah!! It's Brookshire's to the rescue! We've got a recipe for red, white and blue fruit tarts that is about as easy as it gets.
No fancy measuring or mixing, no baking, no freezing…just assemble the mini pies in a matter of minutes! It's so simple that your children can do this task while you take care of other pressing matters.

Red, White and Blue Mini Pies
A Brookshire's Best Recipe
Prep Time: 10 minutes
Serves 8
Ingredients
8 mini-size graham cracker pie crusts (available in the baking aisle)
1 (19-oz) can reduced-calorie cherry pie filling
8-oz tub nonfat whipped topping, thawed, or 1 can spray whipped cream
1 cup blueberries
Directions:
Place each mini pie crust on a tray or baking sheet. Spoon cherry pie filling into each pie crust and top with a dollop or a spritz of whipped topping. Sprinkle blueberries over top.
Chill until serving time.
Note: If you prefer, you can switch the colors and still be patriotic. Use canned blueberry pie filling and garnish with fresh red raspberries.
