Rotisserie Chickens

Easy, inexpensive and delicious, these ready-to-eat meals from Super 1 Foods can also jumpstart bigger menu ideas.

 

Leave it to Super 1 Foods to take all the work out of fixing dinner! Rotisserie chickens are ready-to-eat meals that require no additional preparation. Grab a container of baked beans from the deli and some fresh fruit and you have a complete dinner with no cooking or cutting at all! There's another dimension to rotisserie chickens, though. Since fixing the chicken is the hard part, and Super 1 Foods has already done that for you, that leaves you with time to take that chicken and build more interesting and tasty meals. Just add a few more ingredients and suddenly, that rotisserie chicken becomes a full-fledged homemade dinner! Take a look at some of our recipes and see for yourself!

 

Food safety is always important, so please remember to treat your rotisserie chickens with respect. Bring the chicken straight home from the store, and eat or refrigerate within two hours to avoid bacteria growth. If you're not going to use the meat right away, remove it from the bones and store the meat in a shallow container so it can cool evenly. If stored in zipper-top plastic bags, rotisserie chicken can stay fresh in the refrigerator for 4 days, or in the freezer for up to 4 months.

 

Not sure what to do with rotisserie chicken besides eating it plain? Here are some broad suggestions:

  • One-Dish meals: Combine 2 cups chopped rotisserie chicken with 2 cups cooked rice or pasta, and a can of chicken broth or diced tomatoes. Add a few chopped vegetables; place it all in a 2-quart casserole and bake at 325°F for 30 minutes, or simmer in a large skillet for 10 minutes.
  • Wraps, burritos and sandwiches: stuff shredded chicken into tortillas, pita or slices of bread. Moisten the chicken with mayonnaise or yogurt, and add a few tasty toppings, like chopped apples, tomatoes or nuts. Fill in the edges with shredded lettuce and enjoy!
  • Salads: Add cut-up chicken pieces to mixed salad greens, chopped tomatoes, onions and carrots. Toss with your favorite salad dressing.
  • Mexican Sandwiches: Quesadillas are a snap to make with shredded chicken and a sprinkle of chili powder and cumin. Spoon on one half of a tortilla; add a layer of cheese and sautéed onions and peppers. Sprinkle on the cheese, fold in half and grill. Or make a burrito by rolling chicken, refried beans and tomatoes and baking.
  • Super Soup: Add 2 cups chopped rotisserie chicken, a selection of chopped vegetables (canned, frozen or fresh), and 1 cup uncooked rice or noodles to 3 cans fat-free chicken broth. Simmer until everything's tender.
  • Pot Pies: combine rotisserie chicken, sliced mushrooms and frozen vegetables with reduced-fat condensed chicken or mushroom soup.  Pour into a large casserole or individual baking dishes. Top with refrigerated pie crust, frozen biscuits or puff pastry and bake at 375°F until brown and bubbly, about 15 to 20 minutes.
  • Pizza: Top a pre-baked pizza crust with barbecue sauce or spaghetti sauce, 1 cup chopped rotisserie chicken and 1 cup reduced-fat mozzarella cheese. Bake according to pizza crust directions (generally 10 minutes at 450°F).
  • Skillet Supper: Sauté onion, mushrooms, bell pepper and potato and then stir in 2 cups chopped rotisserie chicken. Season with salt and pepper and sprinkle with Parmesan Cheese. Optional: stir in 1 cup cooked rice.
  • Chicken and Gravy: Heat 2 jars of prepared chicken gravy (or fix 2 packages of dry gravy mix) and add 1 cup chopped rotisserie chicken. Serve over pasta or biscuits.
