Baked Potato Skins
A Brookshire's Best Recipe
Ingredients:
4 medium baking potatoes, already baked
1 Tbs butter-flavored seasoning
1/4 tsp black pepper
1/4 cup reduced-fat shredded cheddar cheese
1/4 cup reduced-fat sour cream
2 green onions, chopped
Directions:
Preheat oven to 450° F.
Cut each potato in half. Scoop out the centers, leaving about ¼ inch of potato on the inside of each skin. Reserve potato flesh for another meal. Cut potato skin halves in half.
Sprinkle butter seasoning onto the inside of each potato skin. Place prepared skins, skin side down, on a baking sheet that has been misted with cooking spray. Bake 10 minutes or until lightly browned. Turn skins over and bake another 5 minutes or until crisp.
Place crispy snacks on a platter, skin side down. Sprinkle with cheese, sour cream and onions. Serve immediately.
Makes 16 skins, which serves 4
