Oregano is a healthy herb, full of antioxidants that help keep us healthy. Gram for gram, it has the most antioxidant power of any cooking herb. Oregano also contains calcium and vitamins A and C.

 

In Greek and Roman times, oregano was the symbol of joy and happiness. You can add joy and happiness to your meals by including oregano with your Orange Roughy!

 

Orange Roughy With Red Peppers

A Brookshire's Best Recipe

 

Ingredients:

2 Tbs olive oil

8 orange roughy fillets

2 red bell peppers, seeded and sliced

1 Tbs fresh oregano, chopped

 

Directions:

Heat olive oil in a large skillet and cook bell peppers over medium heat for 3 minutes. Place fish fillets on top of peppers and sprinkle with oregano. Cover skillet, reduce heat to low and cook for 15 minutes, shaking skillet occasionally, until fish flakes easily with a fork.

 

Serves 4
