Shrimp Cocktail Appetizer Bites

A Brookshire's Best Recipe

 

Ingredients:

1 (4 oz) pkg reduced-fat cream cheese, softened

1/4 cup cocktail sauce

2 English cucumbers (the long kind, wrapped in plastic)

1 lb pkg frozen shrimp (medium or large, peeled and cooked), thawed

 

Directions:

Combine the cream cheese and cocktail sauce in a small bowl. Set aside.

 

Slice the cucumbers on the diagonal, into ¼-inch thick discs. Spread each cucumber slice  with about a teaspoon of the cream cheese mixture. Top with a shrimp.

 

Garnish with fresh parsley or a twist of lemon peel, if desired.

 

Makes about 24.

Speedy Buffalo Shrimp

Ingredients:

1/4 cup flour

1/4 tsp each, salt and cayenne pepper

1 1/2 lb large raw shrimp, shelled, deveined with tails still on

1 Tbs each, butter and olive oil

2 tsp hot sauce

Optional accompaniments: ranch or blue cheese salad dressing, carrot and celery sticks

 

Directions:

On a plate, combine the flour, salt and pepper. Add shrimp and toss to coat.

In a large skillet, heat the oil, butter and hot pepper sauce. Add the shrimp and sauté until lightly browned and the tails are curled, about 4 minutes.

 

Serve with blue cheese or ranch dressing and carrot and celery sticks.
