Smoked Cheese
Serves: 24
Prep Time: 1 hour Cook Time: 11/2 hours
Ingredients:
1 lb cheddar cheese
1/2 lb mozzarella cheese
Apple wood chips
Aluminum foil
Aluminum pan
Directions:
Cut cheese into 4” x 4” x 1” blocks. Place cheese on baking sheet and let cheese sit out for 1 hour to harden. Soak 1/2 cup apple wood chips in water for an hour.
Add 7 to 8 pieces of charcoal on one side of the grill. With aluminum foil build a wall to divide coals from the rest of the grill. Burn charcoals until coals are white. Place soaked apple wood chip onto coals.
Place cheese in aluminum pan and place on the other side of grill from coals in indirect heat. Close grill, open vents and smoke cheese for 1 1/2 hours. Add wood chips if needed. Do not allow the temperature of the smoker to go above 90°F.
Once cheese has reached desired smoky taste, wrap cheese in plastic wrap and refrigerate, if not using immediately.
