Snickerdoodles
Serves: 60 cookies or 5 dozen
Prep Time: 15 minutes, plus refrigeration Cook Time: 11 minutes
Ingredients:
2 cups Food Club All-Purpose Flour
3/4 cup whole wheat flour
2 tsp cream of tartar
2 tsp baking soda
1 3/4 cups sugar substitute, divided
1 cup butter, softened
2 eggs
2 tsp Food Club Vanilla Extract
1 Tbs ground cinnamon
Directions:
In a small bowl combine flours, cream of tartar and baking soda; mix well. In a large bowl cream together 1 1/2 cups sugar substitute and butter. Add eggs and vanilla; mix well. Slowly stir flour mixture into butter mixture, mix until well blended. Refrigerate dough for 1 hour.
Preheat oven to 400° F. Mix remaining 1/4 cup sugar substitute and cinnamon. Shape dough into 1-inch balls. Roll balls in cinnamon-sugar mixture. Place cookies on baking sheet. Bake cookies 9 to 11 minutes, or until lightly browned.
