Black Eyed Peas and Rice

Black Eyed Peas and RiceIngredients:

1 Tbs olive oil

1/2 cup chopped onions

1 1/2 cups water

2 cups frozen black-eyed peas

1/4 cup diced tomatoes with green chilies, drained

1 tsp black pepper

1/4 tsp salt

1 1/2 cups cooked brown rice

 

 

 

 

Directions:

Heat oil in a 3-quart saucepan. Sautee onions about 5 minutes. Stir water, peas, tomatoes and pepper. Stir and bring to a boil. Cover and simmer 18 to 20 minutes.

Remove the black-eyed peas with a slotted spoon and ladle over rice.

Turn the heat to high and cook remaining liquid 3 minutes.

Pour sauce over peas and rice.
