St. Patrick's Day Green Salad
It's so much fun to fix special foods for special holidays. And children are so enthusiastic to prepare something that will have everyone talking about how perfect it is for this day. St. Patrick's Day is a great reason to get creative and come up with dozens of ways to serve green foods.
The following recipe for green salad adds a great feature for children: they get to see how gelatin is almost magical. Mix the powder with hot water, chill for a while and amazingly, it all turns into a gelled, jiggly creation! How fun!
This recipe uses reduced-fat ingredients—a great way to serve healthier treats without any sacrifice in flavor. If your children are young or inexperienced you can open the can of pineapple in advance to prevent cut fingers. You can also measure out the other ingredients so that your young cooks only have to pour each item into the bowl. The hardest part, of course, will be waiting until the gelatin sets up!
St. Patrick's Day Green Salad
Ingredients:
1 (3 oz.) pkg. sugar-free lime gelatin
1 (3 oz) pkg. reduced-fat cream cheese, softened
2 cups miniature marshmallows
2 cups hot water
1 (6 oz.) can crushed pineapple, drained
1 cup nonfat whipped topping, thawed
1/2 cup chopped pecans
Directions:
Dissolve gelatin, cream cheese, and marshmallows in hot
water. Then stir in the pineapple. Place in the refrigerator to chill (about 90 minutes) and when almost thick add whipped topping and pecans.
Chill one hour more.
