Start With…Taco ShellsIt's holiday time—which sometimes means that meals are hard to get organized. If you're having "one of those days," it's nice to have some never-fail foods that everyone will love.

 

Start with a crispy taco shell…

Fill with Salsa and:

            • Shredded rotisserie chicken and sour cream
            • Refried beans and Monterrey Jack cheese
            • Seasoned ground beef and lettuce
            • Black beans, corn and tomatoes
            • Scrambled eggs and green chilis
            • Shrimp and guacamole
            • Mozzarella cheese and black olives
            • Leftover steak and Barbecue sauce
            • Fish sticks and tarter sauce

 

Turkey Burger Tacos

Turkey burgers are lighter in calories and fat than hamburgers!

 

Prep time: 25 minutes; cook time 20 minutes

 

Ingredients:

½ pound lean ground turkey

¼ cup minced onion

¼ cup minced bell pepper

¼ cup bread crumbs

1 teaspoon chili powder

½ teaspoon ground cumin

8 taco shells

 

Directions:

Your favorite taco toppings: shredded lettuce and shredded cheddar cheese, chopped tomatoes

 

In a bowl, combine the turkey, onion, pepper, crumbs, chili and cumin. Form the mixture into rolls about the size of a hot dog (they'll fit in a taco shell, so make them a bit flatter, and about that length).

 

Heat a nonstick skillet to medium high. Sautee the turkey burgers for about 4 minutes on both sides—until done, depending on the thickness of the meat.

 

Serve inside taco shells, with toppings of your choice.
