Summer Snowballs
Just because we live in the hot Southern US, doesn’t mean you can enjoy a frosty snowball! Here’s a simple treat that puts kids in a northern state of mind.
Summer Snowballs
Serves 4
Prep time: 15 minutes, plus freezing
Ingredients:
1 1/2 pints vanilla ice cream
Toppings of your choice, which could include: toffee chips, sweetened shredded coconut, sliced toasted almonds, mini chocolate chips, cake sprinkles, finely chopped cookies
Directions:
Tightly cover a baking dish with plastic wrap. With an ice-cream scoop, form vanilla ice cream into 8 balls, dipping the scoop in hot water as you work, and dropping the balls onto the prepared dish. Freeze until firm, about 30 minutes.
One at a time, remove the balls from the freezer and roll in the desired topping. Return to the freezer and chill until set, at least 10 minutes and up to 2 days.
