Roast Beef and Cheddar
2 slices rye bread
1 Tbs Dijon mustard
8 oz sliced deli roast beef
2 oz smoked cheddar cheese
lettuce
sliced tomato
Spread mustard on bread slices. Top with beef and cheddar, and finish with lettuce and sliced tomato. Slice in half and enjoy!
Roast Beef Croissants
Slice a bakery croissant in half lengthwise, but not all the way through. Add a layer of arugula or other peppery lettuce. Layer on several slices of roast beef and top with a slice of cheese and a dab or horseradish sauce.
Grilled Roast Beef and Blue Cheese Sandwich
1 cup crumbled blue cheese
2 Tbs reduced-fat mayonnaise
1 Tbs prepared horseradish sauce
8 slices of pumpernickel bread
1 lb deli sliced roast beef
1/2 red onion, thinly sliced
2 Tbs butter
salt and pepper to taste
Mash crumbled blue cheese, mayonnaise and horseradish in a small dish until smooth. Place bread on a work surface and spread cheese mixture on one side of each slice.
Top 4 of the bread slices with roast beef and onion. Season with salt and pepper. Cover with remaining bread, cheese side down.
Melt butter in a large skillet or grill. Add sandwiches and cook until golden, about 2 minutes per side.

Roast Beef French Melt
1 Tbs olive oil
1/2 onion, thinly sliced
1/2 bell pepper, thinly sliced
2 Tbs reduced-sodium soy sauce
2 Tbs Worcestershire sauce
1 lb deli sliced roast beef
2 slices French bread
8 slices provolone cheese, smoked if available
Sauté onions and bell peppers in vegetable oil. Add the soy sauce and Worcestershire sauce to the vegetables. Add the meat and allow simmer for 5 minutes.
Toast bread in oven until crisp. Place meat and vegetable mixture on top of the bread and cover with Provolone cheese. Broil until cheese has melted.
Serve with leftover juices.
